HOW TO Make a Kick-Ass Lasagna!

If you think ham has no place in a lasagna, then the following recipe is for you! Thanks to RayGunn for hassling me to publish this somewhere. *WARNING* this one is RICH!!





You will need:
  • 1 Onion
  • Fresh Garlic
  • Olive Oil
  • Basil Leaves (fresh _or_ dried is fine)
  • Dried Oregano
  • Salt
  • Ground Peppercorns
  • 500g minced beef
  • 3 Fresh Tomatoes
  • Pasta Sauce (from the supermarket is fine.. If you make your own, that's great)
  • Instant Lasagne Noodles
  • ½ Cup Flour
  • ½ Cup Milk
  • 1 Tbsp Butter (or margarine)
  • 250g Grated Cheddar Cheese
  • 2 Clean Saucepans
  • 1 Deep(ish) Lasagna Tray


Instructions:

OK, first we're going to prepare the sauce.

Chop up the onion, and crush the garlic (as much as you want - the more the merrier). Heat about 2 Tbsp of the olive oil in a large(ish) saucepan, and once it's nice and hot, add in the garlic. Fry it for a minute or two, then add the onion. Fry for a few minutes and then add in some basil leaves, oregano, salt and pepper. Now add in the minced beef a bit at a time and stir in. Keep cooking this until the beef is cooked through - it should take around 8-10 minutes. Now turn down the heat and pop the lid on the saucepan. You may want to add a tiny bit of water if the fat and oil has cooked out of the meat, leaving it a bit dry. Conversely, if there is way to much oil or fat, drain a bit off.

Now, chop up the tomatoes and add them to the beef. Mix them in and let it sit for around 5-10 minutes on low heat. Now add the pasta sauce and let that sit on low heat for around half an hour. That's it for the sauce - keep stirring it every few minutes otherwise it'll stick to the pan. Now's a good time to put the oven on to preheat to around 250°C.

Now we're going to make the white sauce. Grab another saucepan and put it on high heat. Melt the butter on the bottom (no, the saucepan's bottom) and once it's melted, stir in the flour. Now add the milk and stir until it's blended. Keep heating and stirring until it's thickened then turn the heat off and hurry along to the next bit (it goes gross if you leave it too long).

Add a thin layer of the meat sauce to the lasagna tray, and then place the lasagna noodles over the top so they don't overlap each other. Unless there's been some wierd freak of nature, you're probably going to have to break some of them up so they cover the whole surface. On top of that layer of noodles, add more of the meat sauce and more noodles etc. until you're near the top of your tray. On the top layer, add the white sauce. You might want to use a butter knife to push the white sauce down the inside of the lasagna tray to separate the noodles from the edge. Now add the grated cheese to cover the top, and sprinkle some salt and pepper over it, so it goes crunchy in the oven. Now whack that badboy in the oven for around 45mins to 1hr (or until it's cooked - best way to tell is to poke a knife into the middle - if it goes all the way down with not much resistance, then it's done). And that's it! Kickass lasagna!!

Note: You *can* replace the mincemeat with a mix of vegetables to make a vegetarian version of the same - I use peas, corn, carrot, brocolli, red kidney beans and squash. Also, a layer of spinach on each layer of noodles is great for the vege version. Enjoy!!

I made this dish again last week. I hadn't made it in a while, and this recent session highlighted a few errors in my method above, which I'll note here:
  • Don't heat the oil before you add the garlic. Add the oil and garlic to the saucepan, then turn on the heat. While stirring, add the onion and some salt, pepper and herbs.

  • The cooking time is a bit over the top. Try around 30-40mins otherwise the bottom layer will burn.

  • Make sure there's more liquid than meat on the bottom layer, otherwise it will burn easily.

  • Make the white sauce *after* you've put the meat and noodles in the pan. Duh. Not sure why I didn't catch that when I wrote it.

  • Make sure the lasagna doesn't reach all the way to the top of the pan (ie. use a deeper pan), as it expands a little while cooking and can dump whitesauce over the sides and onto the bottom of your oven. Mmm. Smokey!



After I made (and ate) that one, I put together a vegetarian lasagne using a tin of red kidney beans, a tin of corn, and a bag of frozen mixed veggies in the sauce. It turned out *awesome* using the above tips.

Also, I made my own lasagna noodles using a pasta maker my parents gave me for christmas. If you need confirmation that the store-bought instant kind are ok, then here it is: I couldn't tell the difference!!

Don't forget, you can prepare this dish right up to the point before you stick it in the oven, then let it cool for an hour or two then stick it in the fridge. Then, when you're ready to cook it, bring it out and let it stand for an hour or so and put it in the preheated oven.

Ok, I made this tonight. My brother gave it 10/10, my husband gave 8/10 only because I didn't make a salad to go with it. I give it 11/10 as it was sooooo easy to make and really tasted great BUT looked fantastic. I only had it in the oven for 30 minutes and it was cooked so take care as different ovens have different cooking times as we all know. I checked mine at 30 minutes and it was REALLY ready. Just LOVE this recipe and will be using it again and again... had all the ingredients here in the house - as I do most of the time so it is a great standby dish. Printed it off and have it in my special recipe folder. Thanks
