I made this dish again last week. I hadn't made it in a while, and this recent session highlighted a few errors in my method above, which I'll note here:
  • Don't heat the oil before you add the garlic. Add the oil and garlic to the saucepan, then turn on the heat. While stirring, add the onion and some salt, pepper and herbs.

  • The cooking time is a bit over the top. Try around 30-40mins otherwise the bottom layer will burn.

  • Make sure there's more liquid than meat on the bottom layer, otherwise it will burn easily.

  • Make the white sauce *after* you've put the meat and noodles in the pan. Duh. Not sure why I didn't catch that when I wrote it.

  • Make sure the lasagna doesn't reach all the way to the top of the pan (ie. use a deeper pan), as it expands a little while cooking and can dump whitesauce over the sides and onto the bottom of your oven. Mmm. Smokey!



After I made (and ate) that one, I put together a vegetarian lasagne using a tin of red kidney beans, a tin of corn, and a bag of frozen mixed veggies in the sauce. It turned out *awesome* using the above tips.

Also, I made my own lasagna noodles using a pasta maker my parents gave me for christmas. If you need confirmation that the store-bought instant kind are ok, then here it is: I couldn't tell the difference!!

Don't forget, you can prepare this dish right up to the point before you stick it in the oven, then let it cool for an hour or two then stick it in the fridge. Then, when you're ready to cook it, bring it out and let it stand for an hour or so and put it in the preheated oven.
